Indian Flag

Description: Rogan Josh is a fragrant and flavorful curry hailing from the Kashmir region of India. It features tender pieces of meat, typically lamb, slow-cooked in a rich, aromatic sauce made with yogurt, garlic, and a blend of spices. The dish is known for its deep red color, derived from the use of Kashmiri chilies, and its beautifully balanced flavors.

History: Rogan Josh has its origins in Persian cuisine and was introduced to India by the Mughals. The name “Rogan Josh” is derived from Persian, where “rogan” means “oil” or “fat” and “josh” means “heat” or “passion,” referring to the dish’s vibrant color and robust flavors. Over time, it became a staple in Kashmiri cuisine, where local ingredients and cooking methods refined it into the beloved dish known today.

Our Recipe

Preparation Time: 20 minutes

Cooking Time: 1 hour 30 minutes

Serving Size: 4 servings

Ingredients:

  • 1.5 lbs (700g) lamb shoulder or leg, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil or ghee
  • 2 large onions, finely sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 1 teaspoon ground turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 2 teaspoons paprika
  • 2 teaspoons Kashmiri chili powder (or 1 teaspoon regular chili powder)
  • 1 teaspoon garam masala
  • 1 cinnamon stick
  • 4 green cardamom pods, lightly crushed
  • 2 bay leaves
  • 1 cup water or lamb stock
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Marinate the Lamb: In a large bowl, whisk the yogurt until smooth. Add the lamb pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

  2. Sauté the Onions: Heat the vegetable oil or ghee in a large, heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown, about 10-15 minutes.

  3. Add Aromatics: Add the minced garlic and ginger paste, and cook for another 2 minutes until fragrant.

  4. Spice Mixture: Stir in the ground turmeric, cumin, coriander, cardamom, cloves, paprika, and Kashmiri chili powder. Cook the spices for 2-3 minutes, allowing them to release their aromas.

  5. Brown the Lamb: Add the marinated lamb pieces to the pot, along with the cinnamon stick, green cardamom pods, and bay leaves. Sear the lamb on all sides until browned, about 10 minutes.

  6. Simmer: Pour in the water or lamb stock, stirring to combine. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer gently for 1 hour, stirring occasionally. The lamb should become tender, and the sauce should thicken.

  7. Finish and Season: Stir in the garam masala and season with salt to taste. Simmer for an additional 10 minutes, uncovered, to allow the flavors to meld together.

  8. Serve: Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
