Our Recipe

Preparation Time: 30 minutes

Cooking Time: 45 minutes

Serving Size: 4-6 servings

Ingredients:

For the Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1 bay leaf
  • 4 green cardamom pods
  • 4 cloves
  • 1 cinnamon stick
  • Salt to taste

For the Meat:

  • 1 lb (450g) chicken, lamb, or beef, cut into pieces
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoons garam masala
  • Salt to taste

For the Biryani:

  • 3 tablespoons ghee or vegetable oil
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/2 cup milk
  • A pinch of saffron threads
  • Fried onions and boiled eggs for garnish (optional)

Instructions:

  1. Marinate the Meat: In a large bowl, combine the meat with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix well and let it marinate for at least 30 minutes or overnight in the refrigerator for deeper flavor.

  2. Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. In a large pot, bring 4 cups of water to a boil, add the bay leaf, cardamom pods, cloves, cinnamon stick, and salt. Add the rice and cook until it’s 70-80% cooked (still firm to the bite). Drain the rice and set it aside.

  3. Prepare the Biryani Base: In a heavy-bottomed pot, heat the ghee or oil over medium heat. Add the sliced onions and sauté until golden brown and crispy. Remove half of the onions and set them aside for garnish.

To the remaining onions, add the chopped tomatoes and cook until soft and the oil begins to separate. Stir in the marinated meat and cook until the meat is browned and cooked through, about 15-20 minutes.

  4. Layer the Biryani: In the same pot, spread half of the partially cooked rice over the meat. Sprinkle half of the mint and cilantro leaves over the rice. Add the remaining rice on top, followed by the rest of the mint and cilantro.

Warm the milk slightly and add the saffron threads. Pour the saffron milk over the top layer of rice, along with a drizzle of ghee or oil.

  5. Cook the Biryani: Cover the pot with a tight-fitting lid or seal it with aluminum foil. Cook the biryani on low heat (dum) for about 25-30 minutes, allowing the flavors to meld together and the rice to fully cook. Alternatively, you can bake the sealed pot in a preheated oven at 350°F (175°C) for 30 minutes.

  6. Serve: Gently fluff the biryani with a fork to mix the layers. Garnish with the reserved fried onions and boiled eggs if using. Serve hot with raita (yogurt sauce) and salad.
