Description: Crema Catalana is a rich and creamy dessert consisting of a smooth custard base flavored with lemon or orange zest and cinnamon, topped with a layer of caramelized sugar.

History: Originating from Catalonia, Crema Catalana has been enjoyed since medieval times. Its exact origins are debated, but it has become a staple in Catalan cuisine and is typically served on Saint Joseph’s Day (March 19th).

Ingredients:

  • 4 cups (1 liter) whole milk
  • 1 cinnamon stick
  • Zest of 1 lemon or orange (preferably organic)
  • 6 large egg yolks
  • 1 cup (200g) granulated sugar, divided
  • 2 tablespoons cornstarch
  • Extra sugar for caramelizing the top


Instructions:

Infuse the Milk: In a saucepan, combine the milk, cinnamon stick, and citrus zest. Heat over medium heat until just before boiling. Remove from heat and let it steep for 10-15 minutes to infuse the flavors.

Prepare the Custard Base: In a bowl, whisk together the egg yolks, cornstarch, and 1/2 cup of sugar until pale and creamy.

Combine and Cook: Gradually pour the infused milk into the egg mixture, whisking constantly. Strain the mixture back into the saucepan to remove the cinnamon stick and zest.

Cook the Custard: Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10 minutes). Do not let it boil.

Chill the Custard: Pour the custard into individual ramekins or serving dishes. Cover each with plastic wrap directly on the surface to prevent a skin from forming. Chill in the refrigerator for at least 2 hours or until set.

Caramelize the Top: Just before serving, sprinkle the remaining sugar evenly over the custard surface. Use a culinary torch to caramelize the sugar until it forms a golden-brown crust. Alternatively, place under a preheated broiler for 1-2 minutes, watching closely to avoid burning.

Serve: Let the Crema Catalana sit for a few minutes to allow the caramel to harden. Serve chilled or at room temperature.
