Gazpacho

Spain flag

Description: Gazpacho is a refreshing cold soup made from a blend of raw vegetables, primarily tomatoes, cucumbers, bell peppers, onions, and garlic. Originating from Andalusia, Spain, it’s typically enjoyed during the hot summer months. Its smooth, chilled texture and vibrant flavors make it a perfect starter or light meal.

History: Gazpacho has its roots in ancient Andalusia, where it was a peasant dish made from stale bread, olive oil, garlic, and water. Over the centuries, with the introduction of tomatoes and peppers from the New World, the recipe evolved into the modern gazpacho known today. It’s a staple of Spanish cuisine, representing the simplicity and freshness of Mediterranean ingredients.

Preparation Time: 20 minutes

Serving Size: Serves 4

Ingredients:

  • 2 lbs (900g) ripe tomatoes, cored and roughly chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 2 cups tomato juice
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Garnishes: diced cucumber, diced bell pepper, croutons, fresh herbs (optional)

Instructions:

Prepare the Vegetables

  • In a large bowl, combine the chopped tomatoes, cucumber, red bell pepper, green bell pepper, red onion, and minced garlic.

Blend the Soup

  • Working in batches if necessary, transfer the vegetable mixture to a blender. Add the tomato juice, olive oil, and red wine vinegar. Blend until smooth. For a smoother texture, strain the mixture through a fine-mesh sieve into a large bowl, pressing down with a spoon to extract as much liquid as possible.

Season and Chill

  • Season the gazpacho with salt and pepper to taste. Cover the bowl and refrigerate for at least 2 hours, or until thoroughly chilled.
