Ingredients:

  • 2 large eggs
  • 1 tablespoon fish sauce
  • 1 teaspoon soy sauce
  • 1-2 spring onions, finely chopped
  • 1 small red chili, finely chopped (optional)
  • 1-2 tablespoons vegetable oil (or any neutral oil)
  • Cooked jasmine rice (for serving)
  • Chili sauce or Sriracha (for serving)

 

Instructions:

  1. Prepare the Ingredients: Crack the eggs into a bowl. Add fish sauce, soy sauce, chopped spring onions, and chopped red chili if using. Beat the eggs until well mixed.

  2. Heat the Oil: Heat the vegetable oil in a wok or a non-stick skillet over medium-high heat. Make sure the oil is hot but not smoking.

  3. Cook the Omelette: Pour the egg mixture into the hot oil. The edges should start to bubble and crisp up immediately. Let it cook without disturbing for about 1-2 minutes, until the bottom is golden brown.

  4. Flip the Omelette: Carefully flip the omelette using a spatula. Cook for another 1-2 minutes until the other side is also golden brown and the eggs are cooked through.

  5. Serve: Remove the omelette from the pan and place it on a plate. Serve immediately with a side of cooked jasmine rice and your preferred chili sauce or Sriracha.
