Description: Panna Cotta, meaning “cooked cream” in Italian, is a creamy and luxurious Italian dessert made by simmering sweetened cream with gelatin until set. The dessert is typically served chilled and can be garnished with fresh berries, fruit coulis, caramel sauce, or chocolate shavings. Ingredients:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split lengthwise and seeds scraped out (or 1 teaspoon vanilla extract)
  • 1 packet (about 2 1/4 teaspoons) unflavored gelatin
  • 1/4 cup cold water
  • Fresh berries or berry compote, for serving (optional)

 

Instructions:

  1. In a saucepan, combine the heavy cream, sugar, and vanilla bean seeds (or vanilla extract). Heat over medium heat, stirring occasionally, until the mixture starts to simmer. Remove from heat.

  2. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.

  3. Once the gelatin has bloomed, whisk it into the warm cream mixture until fully dissolved.

  4. Strain the mixture through a fine-mesh sieve to remove any lumps or vanilla bean remnants.

  5. Divide the mixture evenly among four ramekins or dessert cups.

  6. Allow the Panna Cotta to cool to room temperature, then cover each ramekin with plastic wrap and refrigerate for at least 4 hours, or until set.

  7. To serve, run a knife around the edge of each ramekin to loosen the Panna Cotta. Place a serving plate over the top of each ramekin, then invert the plate to release the Panna Cotta.

  8. Serve chilled, topped with fresh berries or berry compote if desired.
