Our Recipe

Preparation Time: 30 minutes (plus 1 hour for cleaning and preparing the octopus if needed)

Cooking Time: 45 minutes

Serving Size: Serves 4

Ingredients:

  • 1 octopus (about 2-3 pounds), cleaned
  • 4 large potatoes, peeled and sliced into 1/2-inch thick rounds
  • 1 bay leaf
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons smoked paprika (Pimentón de la Vera)
  • Coarse sea salt
  • Fresh parsley, chopped (optional for garnish)

Instructions:

Prepare the Octopus:

  • If using a fresh octopus, clean it thoroughly. Remove the beak and eyes, and rinse well under cold water.
  • To tenderize, freeze the octopus overnight and thaw before cooking, or pound it with a meat tenderizer.

Cook the Octopus:

  • Fill a large pot with water and bring it to a boil. Add the bay leaf.
  • Holding the octopus by the head, dip it into the boiling water three times, letting it curl up each time before fully submerging it.
  • Reduce the heat to a simmer and cook the octopus for 40-45 minutes, until tender. To test, insert a knife into the thickest part of a tentacle; it should slide in easily.
  • Remove the octopus and let it cool slightly. Cut the tentacles into 1/2-inch thick slices.

Cook the Potatoes:

  • In a separate pot, bring salted water to a boil.
  • Add the potato slices and cook until tender but still firm, about 10-15 minutes.
  • Drain and set aside.

Assemble the Dish:

  • Arrange the potato slices on a serving platter.
  • Top with the sliced octopus tentacles.

Season and Serve:

  • Drizzle generously with extra virgin olive oil.
  • Sprinkle with smoked paprika and coarse sea salt.
  • Garnish with chopped fresh parsley, if desired.
