Our Recipe

Preparation Time: 20 minutes

Cooking Time: 40 minutes

Serving Size: 4 servings

Ingredients:

  • 1 lb (450g) fresh spinach, washed and chopped
  • 1 cup water
  • 1 tablespoon ghee or vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 2 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 cup paneer, cubed
  • 1/2 cup heavy cream or yogurt
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Blanch the Spinach: In a large pot, bring the water to a boil. Add the chopped spinach and cook for 2-3 minutes until wilted. Drain and immediately transfer the spinach to a bowl of ice water to preserve its green color. Once cooled, drain again and puree the spinach in a blender or food processor until smooth. Set aside.

  2. Prepare the Paneer: If using store-bought paneer, cut it into cubes. Optionally, you can lightly fry the paneer cubes in a bit of oil until golden brown on all sides for added texture and flavor. Set aside.

  3. Cook the Aromatics: In a large skillet or pan, heat the ghee or vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 8-10 minutes. Add the minced garlic, ginger paste, and green chilies, and cook for another 2 minutes until fragrant.

  4. Add the Spices: Stir in the ground cumin, ground coriander, turmeric powder, and garam masala. Cook the spices for 1-2 minutes, allowing them to release their aromas.

  5. Combine Spinach and Paneer: Add the pureed spinach to the skillet, stirring to combine with the onion and spices. Cook for 5-7 minutes, allowing the flavors to meld together. Add the cubed paneer and mix gently to coat the paneer with the spinach mixture.

  6. Finish with Cream: Stir in the heavy cream or yogurt, and season with salt to taste. Cook for another 5 minutes, allowing the sauce to thicken slightly and the paneer to heat through.

  7. Serve: Garnish with fresh cilantro and serve hot with naan or steamed rice.
